[200q20v] Too cold, too hot!

Gentlemen,
My Avant runs like a dream, but two things concern me:
1: My previous '91 Avant always recorded oil temperatures in
the 75-90c range when warm.
The newer one can barely hit 60c, even after an hour of stop
and go driving on a warmish day. Please advise on the list
of things to check. Is there an easy way to employ an
alternate method to accurately check the oil temp??
2: I just installed a brand new Audi radiator (the old one
was leaking). The new one runs much hotter; cruising at
70mph on a cool day it never drops below the 4th bar( the
long one to the right of the three short ones) lll I, and
the electric fan often goes on. This is much hotter than the
old radiator and the previous Avant. Should I be concerned??
Any diagnostic advice??
