Is there any reason *not* to wrap (or cover)
the ECU and connector with plastic?

AFAIK, the ECU and connector _is_ originally covered by a plastic
wrapping. If yours now isn't covered, there is no reason not to
replace a missing or torn covering as long as the ECU is not wet or
damp. You might want to give the ECU a few days (or longer) to dry
out if you suspect it's been wet recently.

It even has a P/N: 447 905 293 A, "boot", per ETKA Illus. 155-30
in the electrical group.
