  The problem you are describing is your Bypass valve going south.  I had the same problem and the new bypass valve solved the problem.  I used a gently used spare from a friend but the problem came back so I suggest buying a stronger more durable valve than stock Bosch valve.

I have been dealing with the same problem for a while now and need some pointers...

When the car is cold (or sometimes even when it is warm), as soon as I start to brake and put my foot on the clutch, half of the time the engine dies.
I usually just let go the clutch and the compression starts it again, but it is annoying like hell. The thing is, it is not constant, sometimes it doesn't do it.

Lately, it has been getting worse in 1st gear, even when want to accelerate, nothing happens sometimes, I need to pump the gaz pedal until at some point the engine picks up...

Any ideas?

RE: 7A cams. I've been running them for quite some time now. Minimal to
not noticable decrease on the low end and the car really pulls from 4-6500
now. IIRC, the overlap is 3 degree's or some minimal amount. Somewhere at
home I have a data sheet with all the specs on AAN/3B/7A cams. With bigger
turbo's, i've tuned several cars that have seen an INCREASE in low end
driveability just from a 7A cam swap and you'd be suprised how much we had
to change the tuning over both the ignition and timing maps to compensate
for the additional air.

Mileage has always sucked the way I drive, it's no worse with the 7A cams.
If the overlap is "bad", i'll deal with the consequences for what it gains
elsewhere.
