My last shop was similar to this, although not a business.  There were 6 
of us which eventually dwindled to 4.   It worked pretty well, but 
bringing new people on was a huge issue.  We had almost $100k of 
equipment, so it was very much an issue of trust.

The single biggest problem with these types of endeavors is finding a 
suitable location.  If you are doing it commercially, you will run into 
all kinds of regulations re: zoning, EPA, etc. and automotive is among 
the most regulated/contained areas.  Never mind if you want to do 
welding as well....   Keeping it non-commercial (a hobby shop) means you 
can avoid a lot of the paperwork/requirements.

The insurance & business issues are very minor compared to finding a 
suitable spot and the appropriate people.
