Thanks for clarifying.  I was assuming that the "standard maps" and limp-home were the 
same thing.  In my recent experience, however, disconnecting the MAF sensor was a 
temporary solution a sizeable leak in the intake tract.  Once repaired, it's clear that 
the sensor itself is not "bad."

Bzzzzt!  Incorrect.
Disconnecting the MAF makes the ECU revert to the standard maps using just throttle input.
If you disconnect it and it runs better, then the MAF is bad.

For what it's worth, I think you can 'induce' the limp-home mode by disconnecting the Mass
AirFlow sensor.  Might be a helpful comparison.
