3B engine problem

I have a problem. Well my car does anyway.
When I put the foot down (past 80% throttle) quickly -
i.e. flooring it - then it just feels like the engines
cuts out totally... sort of throws your forward if you
know what I mean.
Observations - when I gradually put my foot down to
like 5,000 rpm then it is ok .... If it floor it from
any revs then it gives one almighty splutter.
Am seriously wondering about keeping this car as it
wants a few things done very soon including a rear
silencer - can you believe the Audi factory part price
for an S2 rear silencer - part only - is 1,240CHF
(700USD)... oh well ...
If anyone can help me with why this "cutting" out
would occur then I would be VERY grateful.
Michelin man hose including the jubilee clips and the
metal hose and the joining hose (between the two metal
hoses) are all new.
Could it be ISV? air leak somewhere? fuel pump?
injectors? ECU? what?
Anyone think it is either air or fuel? or something
else
