temp gauge drop when termostat is opened

I don't know what kind of cars you've owned before, maybe they had the
temp sensor in the radiator, but there is NOT supposed to be a big drop
in the gauge.  The funciton of the thermostat is to regulate temperature,
keeping it as constant as possible, it opens/closes gradually.  If it's
functioning correctly Normal Operating Temp should be maintained without
swinging fluctuations.  In other words, the car is working like it's
supposed to.
