I5 Head to Block Fitting Advice Please

Hi all
need some advice please, i am in the process of rebuilding the motor in my
donor car, it's a KV 2226cc I5 (UK car), i need to know what is the best way
to centre the headgasket when i fit the new head, i was thinking cutting the
heads off a couple of old head bolts but not sure if they will be long
enough to extract once the head is installed, or maybe buying some wooden
dowl of the appropriate thickness, any BTDT please.
A couple of other issues also, i intend to pull it out once i have installed
the head, any BTDT here too, i have read Bentley and it reckons to be able
to pull it out the top once split from the trans. I am at the stage where
all i need to do (yeah right) is unbolt it from the trans and engine mounts
and out she comes. HMMMMMMMMM
With regard to torqueing the head bolts i have read and understood so i
think the procedure, one question for you all is, do i really go 40nm on the
first bolt and then the next etc in the correct procedure does this not warp
the head initially with a few bolts torqued and some not. Maybe i am
worrying too much as this is the first time i have done this and don't want
screw up!!!!!!
