My car thinks that the coolant is low

Sounds like the sensor in the tank, a fairly common failure. Check the
sensor connector on the bottom of the tank. They're frequently
corroded. Did you try topping it up to the maximum fill line? These
sensors seem to get quite sensitive. But if you're losing coolant slowly,
one source of leaking is the sensor seal in the tank. I believe you cannot
service the sensor. A replacement tank is the solution if this is your
problem.
