Good thinking.  There is a benefit of using separate relays there.
However relays are used also for many other crucial car subsystems,
and they are not redundant.  The type of relays we're talking about here
don't have electronics in them and are fairly simple things.  As long
as they are protected against moisture, heat, corrosion, etc., and the
contacts are properly insulated then they should be quite reliable.
