I noticed the same problem with my 1991 200TQ, but I only notice the
hissing (mine sounds more like light grinding, I'd say) in 3rd and 5th
gears.  In 3rd, if I shift right to the 'top', the hissing/grinding
noise is worst, but if I pull back on the knob slightly towards neutral,
the noise goes away.

On mine, it does that even with the clutch pedal pressed down as I'm
*about* to shift to 3rd.

I'm taking it in this morning for some other work (tie-rod end, CV boot,
some other 'minor' problems) so I'll see what the guys say about this
noise.

Also need new rear calipers and both emerg. brake cables replaced.  One
shop says they usually take the differential out to replace the cables,
so I may as well get some of my leaking (lightly?) transmission seals
redone at the same time.  Does this sound right?
