The answer here is the old one - don't get caught.
You've a number of problems and a lot depends on what you said to the cop at
the time and what happens when you produce your documents.
You could try 'I hadn't realised that the tax was out' but that usually
doesn't work. As you'll need to get it MoT'd before you can tax it you can
always try saying that it _did_ have a valid MoT at the time but you've lost
it. Again, doesn't work very often. Know anybody who'll issue an iffy
ticket?

Basically, no tax, no Mot, what's your insurance like? If your policy
contains that little phrase about 'roadworthy condition', you might find
things getting very sticky....
