Incompetent Monkey or not?

Ack, I told you to get a good competent shop before even attempting to
have any of this work done. If they don't know what a subframe bushing is
then run away and find a better shop. The 2Bennett coilover stuff takes a
good mechanic/fabricator, good welding needed too.

The struts have to come out up front, the spring must come off, shock
out, spring perch cut off, metal ring welded in place, retighten old strut
cap, measure distance between ring and strut cap, cut or grind the threaded
collar to proper height, clean outside of strut of all rust and junk, press
fit the collar onto the strut, insert shock, tighten cap, twist on spring
perch, throw on spring and 2B cap, install strut bearing/bushing, put strut
back in car. For the rears the shock must come out with the spring. Drop
the rear axle, supported of course, do this by undoing top shock nut and
nut/bolt on axle. Take new shock and have the threaded body pressed onto
the shock. Twist on spring perch and toss on spring with 2B cap.
Reinstall, the rear is way easier on a FWD.

Oh also if the front strut is single piece the procedure differs, just
another variable to watch out for.

Get another shop, ASAP!
