Did the mechanic check your thermostat or jst toss it?  That would have een
the time to check the rad and wpump function.  Being a closed system, I
think the fact that you had to top off the cooling system twice is telling.
It seems it was not full/bled from your service.  You can check your
thermostat and water pump by looking for flow with filler cap off and check
temp with appropriate thermometer.  Also check for radiator and A/C dryer
blockage. Doubtful a brand new thermostat is bad.  Probably concentrate on
pump and rad.  If your system is now full and bled, you may be all set.
