Gooey clutch pedal, icky brakes

1988 5000s quattro

Recently had clutch replaced.  At first, the clutch pedal depressed with
little resistance.  It also felt a little bit like the clutch wasn't
"biting" at 100% pressure.  Not exactly slipping, but... you know... it just
didn't feel like there was total power transfer.

Now, a few (cold) days later, the clutch pedal feels gummy.  I could've
sworn I even saw it lag on the way back up.  The clutch "bite" issue is the
same.

Also, when I first got the car back, the brakes were on the worse side of
"iffy."  Now, it really feels like the ABS "klang & clunk" kicks in with
little effort.  Also, it feels like I don't have 100% braking.  To his
credit, the mechanic did say I should come back a few days later so that the
brakes/clutch could be adjusted to my liking.

Could this simply be a bleed issue?  Any tips on getting a nice bleed?  Any
other potential problems?  The clutch is brand new (except for the release
guide bearing sleeve, which he didn't see that I provided) and the slave
cylinder is new.
