Be sure to check out the Roman aquaduct, as well as the Papal palace in
Avignon. I was in the area last spring, and it was beautiful. The whole
countryside is dotted with Roman ruins, and I'm sure you'll find something
you'd like. You can see Van Gogh's inspiration for some of his paintings in
Arles, as well as a flamingo or two.
If I remember correctly, the only complete Roman colloseum outside of Italy
is somewhere in Provence, as well as one of the few intact temples. The whole
area is great, and I'm sure you'll have lots of fun. I'd also recommend a few
days in Nice, if you have the time :)

MAC: When I was there, I took pictures of all the A2's and A3's I saw.
Definately weird looking cars.
