After run sensor change?

Oops, I accidentally edited out the 90C part when I cross posted the info. ;) So there are 3 sensors available, 85C, 90C and 103C. Anyway, I just want to do whatever is best for my car, to give it the LONGEST life possible since it really is irreplaceable and even more rare than a UrQ. :)

you didnt read that very well, did you? There's not two, but three
sensors available, the 034 919 369 is a 90C, not 103C as you wrote here.

If you have an 103C in your car now, what will the swap to an 85C
accomplish? Are you running too hot? Do you have problems with vapor
lock? Do you want your fan to be running more than it already does? I'd
say if it aint broke, dont fix it.
