Sounds like the diaphragm in your DV is torn or leaking. Are you, by chance, using a Bosch DV? If so, those are known for failure when used with anything more than .5 bar of boost. They have been failing like crazy on 1.8T cars, even some stock ones. When we chip the 1.8T it is almost a guarantee that the stock Bosch DV will fail. That's when it's time for a more robust Forge or Bailey's DV. BTDT.

Above 3000rpm (in boost) I get a constant fwooshing

'wooshing' sound.
Actually, more like dry leaves in a tree rustling--but
thats a strange example.
Below 3000rpm, nothing like that.
When I lift off the throttle, I get a crashing of air
(not a whistle like a BOV)
I'm going to assume this is the DV, but I'de like to
get opinions first :)
Oh yes--and my RPMs fall slowly :/
