Arguing with mechanic

How hard of a job is it to change the evaporator on a Coupe GT? Where is it located? My mechanic is saying it is a 3.5 hr job because you have to drop the dahs and gain access to it. He is also saying that it is not a "factory" system because the hoses don't have crimp connectors and have clamp on connectors. I'm beginning to think this guy has no idea what he is talking about.
