To remove the oil cooler system as a variable, you should be able to
undo and remove the thermostat/bracket assembly from the block, install
a nipple (from dealer or spare engine block) and put a filter directly
on the block.

Also, your pressure jumped to "almost reasonable" when you went to a
good filter.  Maybe now try some Xw50 weight oil?

btw, my 90Q doesn't run as high (on their respective stock gauges,
though) as my coupe.  The 90Q pegs when revved cold, but when warm only
shows about 1.5 bar at idle, 3.5 or so revved.
