Yellow mayo sludge stuff in hoses

Just got my rear-ended CGT back from the shop today. Wow, they did a
marvellous job, it's all straight and shiney, yeah!

Anyway, now that I can open the trunk again, I decided it's about
time to change that crankcase ventilation hose that was cracked and
made the car smell like a two-stroke. It's the hose that runs from
the valve cover to the airbox. When I pulled it, it was chockfull of
this yellow mayonnaise stuff. I know it's mostly oil and water
residue.

Now, this car almost exclusively sees long highway runs. So the oil
_always_ reaches well over 100 degrees centigrade. So I wonder: how
come there's still so much of the stuff? And is it bad for the
engine?
