Yes

It is exactly related to air consumed.  Don't know if it a linear
relationship, a simple formula, or a series of different relationships,
though.

You should be able, somehow, to calculate the "potentiometer value" from
maniofl pressure and throttle opening, yes.  I would be tempted to use
the trip comuter for something more mundane (like the clock) and worry
about fuel economy on a tank-to-tank basis, though.
