Condensation from combustion gasses- water is a natural byproduct.

If the engine never fully warms up, such as when making lots of short
trips, the  moisture condenses on cool engine parts and/or never
really boils off.

Ask her what her common driving pattern is, especially right before
you changed the oil.  Also, did you warm up the engine a little
before changing the oil?  That'd do it too, with the cold weather...
