it very likely you have a pinhole leak in your heater core.  BTDT on a Ford
Bronco years ago coming into Ft. Bragg at 34 F.  Once the A/C is off, the
leak fogs you up instantly.  The dryer air of the A/C assisted defroster
manages not to fog up the inside.

You might try a good stop leak, such as Bar's Leak (I think this is what it
is called :-) for a quick fix.  It should at least help you out for the
short term.  Then you may as well contemplate a new heater core.
