You probly had a lot of oil in there from the old turbos. A lot of it you won't see, but make sure to clean out all the intake hoses, from the air cleaner on. If there's any oil in the hoses after the air cleaner, but before the turbo, that's most likely from the crankcase breather hoses. Also it's a good idea to clean out the intercooler. I'd use throttle body/intake cleaner which is a specially designed solvent that's safe on most rubber and plastics. It'll take a bit of effort to clean that intercooler till it comes clean cuz of the small passageways, so it takes some patience and lot's of sloshing.
Another thing that will help is using some Techron or other fuel system cleaner to clean up the intake manifold, valves and combustion chamber from the burned oil. I tried this on my previous 5kt that had a lot of blow-by and turbo oil go through the motor. I got the can version, rather than the spray of Techron and connected a w/s washer hose to a plugged port on the intake manifold. I was able to control the amount of fluid from the can by squeezing the line. There was tons of smoke billowing out, but after a couple of cans, you could definitely see and feel the difference in the combustion chamber w/ the spark plug out. I liked using this method vs. dumping it in the tank cuz that way it's more concentrated in the affected areas and it won't affect the 20 yr. old fuel system seals and o-rings which were probly dry enough already. I've been told that the seals esp. in VAG cars of this era are prone to damage from fuel additives, esp. dry gas and other drying solvents.
BTW, you're cat probly isn't holding much oil in it cuz othe temps inside, but it may eventually get contaminated cuz of all the excess carbon in the exhaust. You'll find out how bad it was to the cat next time you go for emissions. Hope some of this helped... good luck.

OK about a year ago I blew up a turbo in my '89 200tq (mc1 engine)
I replaced it with a junkyard turbo (which turned out to be a K-24)
and it still smoked a lot to where I couldn't drive it.
The original turbo shaft had actually broke in half and puked like a quart of oil in like a min. in to the exhaust.
So I got another turbo from Chris Simple (K26 this time) and put it in this weekend.
Found some oil in the pipe between my intercooler and the turbo from the K24.
So when I first started it it ran good and no smoke.
Went to drive it around yesterday and after a few miles when it warmed up it started smoking again. When I got back close to my house I got on it one good time and left a big cloud.
When the turbo first went I did compression test on the engine and all was good.
The engine still runs good!
Doesn't seem to be eating any oil really the short distance I've driven it.
My though was maybe I got a lot of oil in my cat and I need to replace it (er beat it empty)
A friend mentioned washing out my intercooler too.
Today I turned it on and let it idle for 20-30 min and no smoke till I started to drive it around the block a bit spraying for mosquitoes.
Any one have some BTDTs?
