The first thing I'd do is thoroughly check for air leaks in the intake
system. What you describe sounds like a classic symptom of that.

Sounds like what someone who has no clue about these cars would say.
The 5000 series do have their archilles' heels, and they are somewhat
complex beasts, but not insurmountable if you take the time to learn
and understand them.
The car is now over 16 years old and no doubt in need of some TLC
to return to its past glory. But once everything is done right I
believe you'll find it a very fine machine.
I suggest getting yourself a copy of the Bentley service manual for
your car ( http://www.bentleypublishers.com as well as other sources).
Even if you are not mechanically inclined to fix/maintain the car
yourself, the book will be a wealth of information that would pay
for itself in short order. If you want to do work on the car yourself,
the book is absolutely essential.
