Ben,

I've done it in one piece with no problem at all from the top.
The only trick is to remove the distributor before both operations. I also
removed the cooling system to give a little room.
BTW, I removed the accessories (AC and PS) too.
When you pull the engine/trans combo you will have to do almost like a "J".
It means that as you pull it you'll have to raise the front of the engine
with the cherry picker little by little. At the end the combo is almost
vertical.
I think the major benefit is that you can align the tranny with the engine
way easier with both out of the car.
In your case I also suggest removing the front suspension (you're doing it
anyways), by lowering the front you will be increasing clearance.
