On the '94-'97 C4 disabling the servotronic is extremely easy. Open up the relay box under the hood on the left side, and remove relay # 16. Done in 30 seconds. Keep it in the door pocket so you can easily change back and forth if you have a SO that prefers the one finger steering.
The '92 & '93 have the relay under the glove box and is a little more difficult to get to but not bad.
I wouldn't unplug the connector at the rack. While disconnecting it is easy, you will have to tape up both ends to avoid dirt and grime from building up inside the connector shell that could cause a problem later should you ever want to reconnect it.
