Steve:  A guestimate is:  because of coolant (50/50 mix) and ~5-6 lbs in the 
system, 230 F or 110 C.   212F/100C is boiling point of straight water.

I also believe the gauge in C is the oil temp gauge from his earlier post.  

HOWEVER............ I did some research.  Someone has a picture of a (90-94) 
V8Q doing 152 MPH, its water temp gauge starts at 60C, 100C is straight up 12 
o'clock and the end is 120C.  His 152mph run has the gauge just left of 12 
o'clock where I'd guess the temp is ~90 C.  Judging by the gauge range and the 
link for conversion above, with proper coolant ratio, Audi is giving you to 
248F/120C.
