Brake fluid and ATF changing ques 1995 A6Q Auto

Yes, this is the car that munches on keys:-) Thanks for all your help 
on that one.

I want to change the brake and ATF fluids.  Ran into two challenges:

1. This car is pre-OBD2. Any way to measure level without a pre-OBD2 
scan tool?
2. Is there anything special abotu changing brake fluid, or just start 
pumping it out the bleeder valves 'til its all changed.  The procedure 
looked complex.
