Bart-
Changing the instrument cluster to metric will require replacement of
the cluster- in the past, Kent Anderson has had a bunch of metric
clusters for Canadian cars that he imported to the US. I would check
with him to see if he has any left over.
The "OIL" indicator is a service indicator- it can only be reset with
the 1552 (or equivalent tool- VAG-COM, the Shadetree Palm tool, etc.).
The button on the driver's side is most likely to defeat the acoustic
sensor for the alarm system should you feel the need to leave the
windows down and lock the car- that way, wind and other noise won't
trigger the alarm.
Can't help you with the climate control.
The cupholders are what they are- not very useful, but the Germans
don't allow drinking while driving (of any sort), they don't put much
emphasis on cupholders.
