Exhaust valve ceramic coating or deposits?

Nope- not a coating.

If you have the head off and plan on keeping the car for a while,  
consider removing the EM and downpipe and having the inside cleaned 
+ceramic-coated.  Underhood temperatures will be cut substantially.   
Some folks do the turbo exhaust side housing as well, I think.
