i agree that the coolant cap is the 1st thing to suspect
If the level is coming back after you shut down, it might be worth checking that none of your hoses are getting significantly bigger when the engine is running. i.e some of the hose braiding has broken down and you have a blister forming on a hose when the sytem is pressurised (running AND hot).
I appreciate that this is unlikley, but then it's not un-heard of either
