Me too, at least for things I might want to adjust while driving.

My minimal experience with this is my Nak head unit, which at least has 
a round volume knob.  Most of the "tweaky" settings are buried under a 
function button menu, but I rarely feel any need to mess with them on 
the road.

I like having a dedicated fan knob and heat level knob.

I can only imagine the horrors that could occur if a central control 
panel/screen fails... with the radio loud on the wrong station, the heat 
set wrong, and it barking directions to go somewhere you had to find 
last week... "open the pod bay door, HAL"....
