Yup.  Not personally.  ASC (formerly known as American Sunroof  
Company) did a custom conversion to a coupe GT.  Was for sale here  
(locally in Michigan) a few years back.  Sweet looking, Tornado Red.   
I don't see why you can't do it, though I would definitely do some  
structural bracing.  The roof adds a lot to structural integrity.
