It's illegal to "gut" a cat.  I think your car has pre-cat and post-cat
oxygen sensors.  Without a simulator, the check engine light would still be
on and your fuel economy would suffer.  Cars with dual cats would also have
different backpressures and added crankshaft stresses due to increased power
on one side of the engine.

In other words, to remove the cats, do both sides, and you'll have to get o2
simulators to fool the system into thinking the emissions are working (i.e.
no check engine light).  You might try to find a used cat/downpipe if money
is really tight.

Last time I gutted a cat (it was a race car, honest!), I used a long pry bar
(with almost a screwdriver end).  Generally the guts come out in chunks with
enough chopping and shaking.

How many miles are on the vehicle?  Has it ever ran with failed sensors and
an overly rich condition?

The first thing any shop does is pull the codes.  What did the VAG scanner
say?
