There are lots of tests you can perform if you have the tools or resources 
but the 2500 rpm mark tells me the high oil pressure switch has gone south 
on you. There are two switches and they are both cheap. Cheap enough that if 
you don't have the know-how or tools to do the testing just buy both 
switches at about $5 ($2.99 at some places) each, replace them both and 
hopefully be done with it for another 120k miles.
