I've had that happen twice. On my 91 Jetta there was a loose connection for the O2 sensor. I opened it, cleaned it and problem disappeared. The second time is ongoing. My 87 16V Scirocco stalls after going for 3-4 minutes. It will run again after 2 minutes again. I unplug the O2 and problem gone. I've checked all connections, but no change yet.

Try to unplug the O2 sensor and see if that helps.
