Which Sensor?

We are in a deep freeze here in Canada and the car thinks it's summer! This is a 1988 90Q, NG engine. The radiator fan comes on shortly after the car is started and continues long after the car is stopped. Engine doesn't get a chance to warm up, only goes up to 60C or so. The temp sensor on the radiator itself would be responsible for this, right? Can I simply disconnect the sensor and the fan will stop running?
However, I'm also not sure if the lower sensor on the cylinder head flange (quadruple connector) is involved. Background: when we got the car, the wires inside the rubber boot covering the sensor were completely rotted out. I threw out the rubber boot, installed spade connectors on the wires and connected them directly to the sensor - three wires out of four, that is. I looked at the position of wires in the boot and connected them accordingly; however, there is still some lingering doubt in my mind whether I did this correctly. Would anyone be able to tell me the colours of the wires that go to each sensor terminal?
