Which sensor - is there a sensor?

The sensor is on the back, at the bottom.
Isn't there also a function where the AC can run the fan too, that could
go wrong?
Anyway, find that radiator sender and unplug it, see if it fixes things,
if it does, get a new one. With sufficient deftness it can be replaced
with very little coolant loss.
As far as the t-stat, wait til you fix the fan to worry about it - even
a "closed" one passes some fluid, which might be enough in combo with
the running fan to prevent full warm-up.
