I have a plastic case that Legal Speeding used to sell. It's basically like two halves of a blister pack made to fit the V1. I got it for my motorcycle, but I really haven't used it much. Valentine and the instructions with the case both warn against running for long periods of time with the unit fully enclosed due to the heat that is generated. They suggest leaving the V1 attached the the base half and only adding the top when the weather gets foul.
Since you don't need to view the unit, why not just use something like a ziplock bag? I know some motorcycle guys who just use those shower-cap type things with a rubber band. I guess you need to have some impact protection? I wonder of you could open the unit and just relocate the sensors. They might be soldered onto a board, but if they're just wired, it would be easy to extend the wiring.
