Joe,
Does the new J-hose include the restrictor in the center
of the hose? If it's a new dealer part (and the correct one)
I'm sure it must have the restrictor and you can ignore the
rest of this email. But if the hose was rebuilt it may have
been left out.
The reason I mention this is that if the Audi system is
like some other brake/steering systems powered with a
hydraulic pump, the restriction is used to limit the flow
into the accumulator when the pump pressure gets higher
than the accumulator pressure. This prevents the power
steering system from momentarily getting "short-changed"
on pressure when the accumulator is recharging.
So if the restrictor is missing, it could cause your symptoms
when the pump outlet pressure gets higher when you're
turning the wheel, or when the accumulator pressure drops
with hard braking.
