If your temperature reading fluctuates but the engine tempereture isn't,
then it's either the gauge itself or the multifunction temperature sender
(another common Audi problem). You can check the gauge by putting a 40 ohm
resistor (check that in Bentley) across the gauge and seeing that it reads
in the normal position. If it does, then it's your sender. I just
replaced mine in the S4, the new ones are 3 prong instead of 4. Hardest
part is unscrewing it, it's an oddball size (39 mm?) and requires a deep
socket. I ended up using a pair of Channel Locks and some rubber to
prevent messing up the brass fitting.
You need to partially drain the antifreeze, might as well replace it (and
use the right one!). Upgrade would be that you now have the "correct"
antifreeze if you didn't have it before. You probably want to pull the
T-stat out to get all the old coolant out, be sure to use a new O-ring.
