Paul,
The t-stat failing will cause the temp guage to fluctuate with different driving conditions. I.E. goes low on the freeway comes back up in traffic. A good t-stat still does this to some degree but a bad one will pretty much bottom out or never heat up while traveling at highway speeds. The MFTS will cause you to just have an erratic temp guage. For instance you heat the car up in the morning so the guage is at the half way point and while you're backing out the temp needle drops to the bottom instantly like you shut the car off or something. The bad t-stat is much more graduall and the temp guage will always be bottomed out on the highway.
