I'm a bit confused why Bruce chose the Aquamist 2c system as opposed
to the 2s, which looks to be completely self-contained and engineered
as a whole.

Bob's system sounds completely insane. :-)

Obviously with a always on system, you're putting more stress on the
whole system as it's pressurized all the time, right? Considering that
the ECU software is not modified, I wouldn't think it would be a problem
to not have it react instantaneously if that were the case, unless
you're
also thinking about modifying your ECU software to allow the car to run
hotter and leaner, relying on the water injection to keep things under
control.

At least w/ a type 44, I have two washer bottle mounts, so should I
get water injection, I can just buy a 5k bottle to feed the windshield
washers and use the stock bottle for water injection.

Don't put nitromethane into your car, that's not a good idea. :-)
