Can't heel and toe a Ferrari that way Marc, in fact, it's easiest to do the
inverse duck method. "Heel and toe" is the term for the technique of rev
matching downshifts under braking. IMO/E however you ultimately accomplish
the technique is the "correct" way, period. Specifically, the only "wrong"
way to H&T is simply missing the rev match.
I'll also comment that H&T can be a good tool for reducing "lap" time, but
IME you can ditch the technique in favor of taking the ride at the track with
a guy that knows the track and the lines. Me, I'm a lazy slob, I've stopped
H&T years ago (save a select few rides that have race boxes and no synchros),
in a street audi on the track, it rarely results in better times. I'd
advocate (and teach) proper LFB technique and understanding quattro lines
around a specific venue. You guys with torsens (all on this list) have
bigger chassis dynamic issues to master before H&T becomes er, beneficial?
In discussions at Grattan last weekend with the drivers of a full GT2 spec
930 and a 4valve 951, I stood agape when I learned neither used LFBing (the
GT2 was still the fastest around the track too). Screw H&T boys, master LFB,
and go to as many track events as you can. THEN when H&T, do know that the
size and width of the foot has more to do with *your* definition of H&T, than
how you contort them.

I actually think our cars are set up pretty well for heel-toeing, using

stock pedals and stock 12EEEs (you know what they say about guys with
big
feet...they have an easier time matching revs!)
