I feel that your brake analysis is flawed. I track my car quite a bit and  
run 343X32mm 2 piece AP racing rotors with their 6 piston calipers. They fit  
under my 17" OZs and SSR Comps and I don't experience excessive front end  dive. 
I run stock size slotted rotors from ECS on the rear. I have found that by  
running the rear rotors without the splash shields, they run cool enough to  
use Hawk HP Plus pads. I can also run Hawk HP Plus pads in the front for tracks  
like Lime Rock, that don't require a tremendous amount of braking. Tracks 
like  Watkins Glen require a more track dedicated compound if you run in multiple 
run  groups, which I do. There is not enough time for the brakes to cool 
down. This  could probably be resolved with cooling ducts, but that is another 
issue.
 
I also run the 2Bennett coilovers with 400lb springs, both front and  rear. 
However, I run the Advanced Design front struts. I run these at  minimum 
compression and only 1/2 turn of rebound for both the street and track.  The rears 
are Koni Sports at maximum rebound. I intend to have my Bilstein  Sports 
revalved and swapped in the place of the Koni's this winter. I also  run a 28mm FSB 
and your 26mm RSB on the middle setting.
 
I think a good solution for the rear would be a larger rotor with a bracket  
to offset the existing caliper. However, at this time I don't know if that 
would  be useful without some way of changing the existing brake balance.
