Even at -15 C I still manage to hit 100 C on the highway, or roads for that
matter.
I would be looking at the sensor and the oil thermostat...

I have a suspicion that the oil temp gauge only indicates something if
you really thrash the car. With all the speed cameras on the motorways
here in the UK, and all the potholes and corners on the A and B roads,
you can't drive with full boost for very long - no more than a few
seconds at a time.
On the track, it would probably be different, but I've never had the
urge to try my car out on the track - it's a road car, and if I pranged
it, I'd have to cycle to work for the next few years!

My 93 S4 oil temperature gage barely moves off the lowest mark, even
after a recent belt and thermostat replacement.
