Thanks to all of the suggestions from everyone who replied regarding the
hesitation on boost.
The answer was actually none of your suggestions, but it is amazing how
much easier it is to diagnose a problem in daylight :)

Ayup, that would be the wastegate hose lying near the inner fender(!).
Apparently the mechanics that installed Lee's replacement turbo neglected
to torque the banjo bolt on the wastegate (what was the name of the shop
again, Lee?). The hose was actually nearly burnt all the way through from
resting on the exhaust manifold. No wonder I was getting hesitation..
Clearly the engine was quickly overboosting and the ECU was cutting the
fuel supply to prevent engine damage. I'm surprised I didn't get a check
engine light for this?
Anyway, to replace the hose, I had some -6 AN braided SS hose lying around
plus some decorative AN style 'fake' fittings (the kind that end with hose
clamps) so I made a braided hose to replaced the burnt stock piece.

Took the car for a spin and everything feels great. I have Paul to thank
for now wanting a chip, because it just isn't nearly as fast as the extra
ponies from the upgrades on his car. Oh boy, $lippery $lope here I come!
At least the brakes I'm all set on (Porsche 996 calipers on A8 rotors).. I
took a friend of mine for a ride, and he mentions as we're passing a side
road "I think there are some nice corners down that way" so I proceed to
_make_ the turn for the corner. No drama, just massive and sudden speed
reduction. I could get used to this car in a hurry. Happy Happy Joy Joy,
