Take it to court and ask who the officer was who signed the ticket. Then ask
that officer if he was the one who clocked you at 80.
When he says that he didn't and it was the officer in the plane you then ask
if hearsay is admissible in court.
Hopefully judge throws it out.
I know this was a common (successful) defense argument for the speed traps on
95 in CT years ago when they would have one car taking radar and a half a
dozen chase cars.
Even if you decide not to use this argument you are best off going to court,
finding the officer who gave you the ticket (usually he will try to find you)
and work out a bargain with him. Hopefully a non-moving violation one for a
lot less $$.
